Beef Biryani Recipe
ingredients:
For the beef marinade:
500g beef (medium pieces, bone-in preference)
½ cup yogurt
1 tbsp ginger-garlic paste
1 tsp red chili powder
½ tsp turmeric powder
1 tsp garam masala
Salt to taste
For rice:
2 cups basmati rice (washed and soaked for 30 mins)
1 bay leaf
4 cloves
2 cardamoms
1 small cinnamon stick
Salt to taste
For biryani masala:
2 large onions (thinly sliced)
2 tomatoes (chopped)
1 tsp cumin seeds
½ tsp coriander powder
½ tsp black pepper
1 tbsp meat masala or biryani masala
Fresh mint and coriander leaves
2–3 tbsp ghee or oil
Optional:
Food color in 2 tbsp milk or saffron soaked in warm milk
Instructions:
Step 1: Marinate the Beef
Mix together beef, turmeric, red chili powder, ginger-garlic paste, yogurt, garam masala, and salt.
Cover and refrigerate for at least 1 hour or overnight for maximum flavor.
Step 2: Cook the Rice
Boil salt water and whole spices.
Add soaked rice and cook till 80% ready. Drain and set aside.
Step 3: Make the Masala
Heat oil/ghee in a big pan.
Add cumin seeds, followed by sliced onions. Fry till golden brown.
Add tomatoes, biryani masala, coriander powder, black pepper. Fry till oil separates.
Add marinated beef. Cook on high for 5–7 mins, then reduce heat and cook till beef is done. Add water if needed.
Step 4: Layering
Once beef is done and masala is thick, layer half the rice on it.
Sprinkle some chopped coriander, mint, and optional saffron milk.
Add remaining rice, repeat herbs and saffron.
Cover tightly and cook on low heat (dum) for 15–20 minutes.
Step 5: Serve Hot
Mix gently before serving.
Serve with raita or salad.
